  • 4 slices bacon, cut into 1/2" pieces
  • 1 Garlic clove, minced
  • 1 small shallot, chopped
  • 3 tbsp. apple cider vinegar
  • 2 tbsp. Dijon mustard
  • kosher salt
  • Freshly ground black pepper
  • 1 tbsp. extra-virgin olive oil
  • 4 boneless skinless chicken breasts
  • 4 c. Brussel sprouts, trimmed and sliced
  • 1/2 c. fresh parsley, chopped
  • 1 c. croutons

Step 1: Start by cooking the bacon in a medium skillet over medium heat until it becomes crispy, which should take about 6 minutes. Then, transfer the cooked bacon to a plate lined with paper towels. In the same skillet, add the garlic and shallots and cook them until they become softened, which usually takes around 2 minutes. Whisk in the vinegar and mustard, and make sure to season generously with salt and pepper. If there isn’t enough bacon drippings to create a dressing, you can whisk in 1 tablespoon of olive oil. Keep the mixture warm.

Step 2: In a large skillet over medium-high heat, heat some olive oil. Season the chicken with salt and pepper, and then sear it in the skillet until it turns golden brown and the juices run clear. This process usually takes about 5 minutes per side. Once the chicken is cooked, remove it from the heat and let it rest covered in foil.

Step 3: In a large mixing bowl, toss together the Brussels sprouts, parsley, and croutons with the warm dressing. Serve this mixture with the cooked chicken and top it off with additional dressing and bacon.
